We are delighted to bring you a Chef's Master Class to our course programming, and we are privileged to have Kevin MacGillivray tutoring the first event.
As a hugely respected professional with over 25 years of experience garnered from the British Transport Hotel, Gleddoch House and Ballathie House Hotel, Kevin throughout his career, has endeavoured to put Scotland on the map as a first class culinary destination. He has worked with the Scottish Culinary Team and its participation at competitions worldwide, demonstrated his culinary skills in the Vanderbuilt Hall in New York during Tartan Week and won several awards including Scottish Chef of the Year, the Flavour of Scotland Awards and the Macallan Taste of Scotland Country House Hotel of the Year Award to name just a few.
Since 1991 when he became the first chef at the newly opened Lochgreen House Hotel, Kevin has endeavoured to put Scotland firmly and irrevocably on the map as a world-class culinary destination. "I've always loved food and everything about it", he says. "Ever since I decided to become a chef, I've had an intense passion for what I do, and a respect for the tools of my trade - the food. After 14 years at Ballathie I decided I wanted to do something to help improve other people's perceptions of Scottish food, not just those who stayed at the hotel."
We are delighted that Kevin will be working with us in the provision of Chefs Master Classes.
Hospitality Training has been affiliated with the Federation of Chefs Scotland for many years. We are committed to the development of skills in the industry. At this year's Chef of the Year Awards Ceremony, we had the opportunity to speak to Kevin, about our hopes for the future of chefs in Grampian, and found some very common ground. As a natural development of this discussion we plan to deliver a Master Class on game in October 2007. Kevin will take up to 10 chefs in the workshop, and has sourced fantastic game from Braehead Foods to work with. The course will last a full day, and will incorporate a mixture of Demonstrations and practical sessions.
We anticipate that there will be a high demand, and urge any interested chefs to contact us as soon as possible.
