Food and Beverge Service

Food and Beverage Service is at the Front of an operation and is important that guests receive good service and also receive the service they have requested or are expecting.

The Food and Beverage Service VQ is for operational team members who's daily tasks is to serve guests.

The qualification looks at the Health and Safety aspect of the working environment, which has become more and more important over the years. There are also units on creating and maintaining good working relations and Customer Care.

Being prepared for your daily tasks and leaving your work environment how you find it at the end of the day makes for a successful working team.

There are various units you can then choose to focus on and these will be dependent on your work environment, these include providing a table service, providing a Carvery/Buffet and Silver service. They also include Provide and serve bottled wines, hot drinks.

The qualification will also look at dealing with payments and maintaining the payment point if this is part of your normal duties.

 

Food & Beverage Service SCQF Level 5

Mandatory Units

  • 1GEN1: Maintain health and safety in hospitality

  • 1GEN4: Work effectively as part of a hospitality team

  • 2GEN1: Impact of personal behaviour in hospitality

  • 2GEN5: Maintain food safety in a hospitality environment

Optional units (six units required)

  • 1FBS1: Prepare and clear the bar area

  • 2FBS2: Serve alcoholic and soft drinks

  • 2FBS3: Prepare and serve cocktails (Mixology)

  • 2FBS4: Prepare and serve beer/cider

  • 2FBS5: Prepare and serve wine

  • 2FBS6: Maintain Cellar and Kegs 

  • 2FBS7: Clean drink dispense lines

  • 2FBS8: Prepare and serve dispensed and instant hot drinks

  • 2FBS9: Set up a specialist coffee station

  • 2FBS10: Prepare and serve beverages from a specialist coffee station

  • 2FBS11: Clean and close a specialist coffee station

  • 2FBS12: Receive, store and issue drinks stock

  • 2FBS13: Prepare and clear areas for table service

  • 2FBS14: Serve food at the table (Formal Dining)

  • 2FBS15: Serve food at the table (Casual Dining)

  • 2FBS16: Provide a silver service

  • 2FBS17: Provide a buffet service

  • 2FBS 19: Promote new menu items

  • 2GEN7:  Resolve customer service problems

  • 2GEN8:  Promote additional services or products to customers

  • 2GEN11: Maintain customer service through effective handover

  • 2GEN12: Maintain and deal with payments

 

Beverage Service SCQF Level 5
