What will I learn?
Your journey to becoming a qualified chef starts here
You will learn on the job and the training will take roughly 12 months to complete.
You will earn a salary and work within a kitchen team. Your training assessor will schedule visits to assess you in the workplace.
There are mandatory modules and optional modules to select to complete the qualification. The qualification is made up of the following areas
Maintain Food Safety in a Kitchen Environment
Minimise the Risk of Allergens to Customers
Developing Meta-skills and Personal Practice
Prepare Vegetables, fish, shellfish, meat, poultry, game or offal for Basic Dishes
Cook and finish Bread and Dough, vegetables, fish, shellfish, meat, poultry, game or offal dishes
Prepare, Cook and Finish Basic Rice, pasta, pulses, plant-based, egg & Grain Dishes
Prepare, Cook and Finish Basic Pastry Products, Cakes, Sponges, Biscuits and Scones, Cold and Hot Desserts
Prepare, Cook and Finish Basic Sauces and Dressings, Make Basic Stocks & soups
Maintain an Efficient Use of Resources in the Kitchen
Maintaining Health, Safety and Security
Modify Dishes to Meet the Specific Nutritional Needs of Individuals
Planning and Monitoring Own Workload
Prepare and Clear Areas for Food and Beverage Service
